To enable and accelerate the transition to alternative food sources across the globe is what drives us. The Protein Brewery develops sustainable, nutritious food ingredients to help feed our growing population that is expected to reach 10 billion people in 2050.

Reliable supply chain

We develop our food ingredients around a scalable, efficient, easy-to-operate, and zero-waste brewing process which turns the sugars from starch rich crops into protein through fermentation. We can make use of waste- and side streams of a wide variety of locally available crops in our brewing process. Doing so we enable a supply chain that is concise, secure, and reliable, while mitigating scarcity.

Less land, less water, zero waste

More than 1 billion people worldwide depend on forests for their livelihoods. To be able to feed a growing population in a sustainable manner, we need to understand the impact of our actions and take responsibility.


Fermotein® and biodiversity
Biodiversity forms the web of life, from genes and bacteria to entire ecosystems such as coral reefs and forests. We depend on it for so many things – food, water, a stable climate. The main driver of biodiversity loss remains our use of land – primarily for food production.

To determine the total impact of Fermotein® on biodiversity, we focused on two key factors, deforestation, and land efficiency. [We compared animal protein production versus alternative protein processes.]


1)  Deforestation - The crops used to produce Fermotein® are starch-rich crops that traditionally grow in areas outside the equatorial rainforest. They don’t need to be grown where rainforest is or used to be.

2)  Land efficiency - Let’s take the most obvious equation first. To produce 1 kg of animal protein, one needs 10 kg of plant proteins. Moreover, the production of animal protein takes up 40 to 50 times more land. The need for alternative protein is a no-brainer.

Looking at a plant-based comparison and compare Fermotein® production with the production of pea protein in the Netherlands, we experienced a yield of 4,000 kg of protein per hectare of potato, compared to 1,000 kg protein per hectare of pea. Additionally, the nutritional properties of Fermotein® are more than 30% higher than pea protein. It boils down to 5 times more nutritional yield per hectare. Compared to soy, Fermotein® has a 4 times better nutritional yield.

Life Cycle Assessment

In the development of our food ingredients, we focus on controlling and mitigating our environmental impact. Fermotein® has one of the lowest ecological footprints of all food ingredients – animal based and plant based. To measure the environmental impact of our hero product, Fermotein®, we had a comparative Life Cycle Assessment carried out. This proved that brewing Fermotein® comes down to only using 1% of land and 5% of water compared to (the production of) beef.
