The Protein Brewery (TPB) is a young, highly innovative company focused on creative technologies to develop and produce sustainable food ingredients using classical brewing and precision fermentation technology. We are addressing the eminent global shift from animal-based food ingredients towards a sustainable, plant-based food chain. Our team in Breda currently consists of 40 people and is growing fast. Who are we looking for?
The Protein Brewery has developed a completely new, highly nutritious food ingredient based on fermentation, called Fermotein®. We’re looking for an exceptional Senior Product Application Specialist, a culinary maestro and visionary leader, who enjoys spending time in the kitchen, and who can lead our application team towards a successful and global roll-out of our new food ingredient. In this pivotal role you will get to exercise a perfect blend of hands-on culinary craftmanship and strategic leadership, focused on the Bakery & Snacks category. Your mission: to craft delectable plant-based food products, ranging from artisanal muffins to protein-packed bars and savory tortillas, all powered by Fermotein®. Therefore, you will work closely with our other Product Developers, Food Technologists, Commercial Director, and also partner up externally for the necessary resources and experience (product development parties, customers, consultants). Your main goal is to define and demonstrate Fermotein’s unique value proposition into concept products for potential customers, and work with customers in their applications. We’re looking for somebody with an entrepreneurial, creative and adventurous mindset to join our team.
What are your responsibilities and scope in this role?

Innovate and develop new product concepts using ingredients produced by The Protein Brewery for our bakery/snacks category.

Build expertise and understanding of the characteristics and performance of ingredients made by TPB in various food systems, becoming a trusted advisor to business partners and customers in their own product development.

Work hands-on in our Food Experience Centre to build a diverse portfolio of product applications.

Develop concept recipes with exceptional sensory and consumer appeal and continuously aim to improve the recipes based on the results.

Own and execute the application strategy, which is aligned with the commercial strategy to serve TPBs customers. Define, lead and implement the product application plan.

Establish robust customer relationships through product presentations, sampling and demonstrations featuring applications of TPB ingredients.
What does your profile look like?
We are a good match if you have...
-
A bachelor degree in the field of Food or Nutrition from renowned institutions like the HAS University of Applied Sciences, in Wageningen or any international equivalent.

A proven track record of at least eight to ten years of experience working preferably in bakery/snack product development.
-
hands on experience working with alternative proteins in a test or industrial kitchen and used different types of kitchenware and equipment.
-
experience in working with 3rd parties and customers in an iterative process in order to come to the optimal product concept.

deep understanding of flavour systems, new protein applications, emulsions and ingredient technology, all geared toward crafting outstanding and great tasting vegan products.

Leadership experience, either directly or indirectly coaching / leading co-workers.

A decisive personality with a good dose of creativity and energy.

are fluent (written and spoken) in English.
