Who are we?

The Protein Brewery (TPB) is a young, highly innovative company focused on creative technologies to develop and produce sustainable food ingredients using classical brewing and precision fermentation technology. We are addressing the eminent global shift from animal-based food ingredients towards a sustainable, plant-based food chain. Our team in Breda currently consists of 35 people and is growing fast. What does your profile look like?

We are a good match if you have...

  • A bachelor degree in the field of Food or Nutrition for example at the HAS University of Applied Sciences, in Wageningen or any international equivalent.

  • At least five years of experience working in bakery product development, for example for a private label.

  • Hands on experience working with alternative proteins in a test or industrial kitchen and used different types of kitchenware and equipment.

  • Experience in working with 3rd parties and customers in an iterative process in order to come to the optimal product concept.

  • Deep understanding of flavour systems, new protein applications, emulsions and ingredient technology and how to achieve unique and great tasting vegan products.

  • Are fluent (written and spoken) in English.

  • willingness to travel.

Who are we looking for?
The Protein Brewery has developed a completely new, highly nutritious food ingredient based on fermentation, called Fermotein®. We’re looking for a creative and hands-on Product Application Developer who enjoys spending time in the kitchen and who is motivated to be part of the journey to introduce and roll-out our new food ingredient into the world. In this role you will work on developing plant-based food product concepts and recipes with our food ingredient Fermotein® for the Bakery category. You will work closely with our other Product Developers, Food Technologists and Commercial Director. Your main goal is to demonstrate how Fermotein® can be applied in products, recipes and concepts for potential customers. We’re looking for somebody with an entrepreneurial and adventurous mindset to join our team.


What are your responsibilities and scope in this role?

  • Develop new product concepts using ingredients produced by The Protein Brewery for our bakery category. The product applications vary from muffins, to protein bars, savoury tortilla’s and other possible applications.

  • Build expertise and understanding of the characteristics and performance of ingredients made by TPB in various food systems, to better provide guidance and advise to business partners and customers in their own product development.

  • Work hands-on in the test kitchen to build a portfolio of product applications and work in partnership with customers and business partners wherever collaboration is possible.

  • Develop concept recipes with high acceptability ratings in sensory and consumer tests and continuously aim to improve the recipes based on the results.

  • Communicate with customers and conduct product presentations and product sampling or demonstrations featuring applications of TPB ingredients to customers.
